I was so excited to try these...then I saw the Worcestershire. It's not vegetarian (anchovies). They do make a vegetarian kind, but the brand you used is not. Just a friendly heads up!

Great information! If you have a post on making sausage I'd love to see it! Wish we had done some research on the attachments before purchase, I definitely had hoped they would serve me well but was completely let down. Good to see you've had great results with making sausage that's healthier and more delicious than store bought.

I have been making sausage for over a year now and will tell you that the KitchenAid attachements are impossible to use. Fortunately, I read about this before I began making sausage, so I avoided the severe discouragement that you mention here. Since you asked above, I use an LEM grinder and one of their vertical sausage stuffers. www.lemproducts.com
For any sausage, try to grind the meat when it is nearly frozen, and keep it very cold. This will keep the grinding plate from getting gunked up. Also, poultry sausage needs fat, so grinding it with the skin and fat is commonplace. And seasoning is important too.
The little strings you found on the casings are natural, and removed in larger production facilites. In addition to soaking them, also good to run water through them to get any last bits of salt residue out.
One last tip, when making sausage, let them air dry in the fridge overnight. Yes, prick the casings with a sterilized needle, but let them rest on a rack, uncovered overnight to dry and to let the flavors meld.
I hope you give it a try again, but this time with some better equipment. We have found the results to be so much better - and healthier - than anything we can get from a store.

Duck in Mexico, huh? Sounds fancy for Mexico. :) I don't think I ever plunged us into full on food poisoning before where it lasts longer and utilizes every exit of the body, but I've entered "discomfort" territory more than once. Whoops!

Yowza. The last time I had food poisoning was a few years ago from eating duck in Mexico (long story). But making something that makes me sick like that is one of my big fears - glad it didn't last long for you guys!

I can bring the purple one back to you, if you want! :D It's still in a pot so it's still mobile. I'm so happy when the irises bloom each year because they last so much longer than some of the freesias (that you also gave me) or daffodils!

Arrrgh....you got the purple one, I loved this one....I only have white ones and white with yellow frills around the edges....don't know what happened to all the purple ones...next time here you'll have to take some roots from the beautiful yellow ones too! Was at the Green Scene at South Coast Plaza today, and almost bought a 2 tone one...petals were purple and the cup part was yellow...very different, but I can't get down on my knees so easy any more, so I bought another orchid instead! LOL
Love ya, and enjoy your garden as much as I do mine!
